Development of descriptors for organoleptic evaluation of sugar beet with disease identification

Abstract. Consumers of sugar beet industry products – sugar, molasses, and dried pulp – impose stringent requirements on their micronutrient composition. To reduce the content of micronutrients, the technological flow control system should involve modern technologies, equipment, and measurement techniques. An assessment of the organoleptic characteristics of sugar beet with the identification of the disease was proposed as a new parameter for controlling the technological flow. It is based on the provisions of the descriptor-profile method. The objects of the study were the roots of sugar beets. The descriptors proposed by a group of testers represented individual characteristics of the state of the roots associated with various diseases, and visual and tactile sensations obtained during their examination formulated as signs. Based on the study results it was formed a panel of 4 descriptors: colour and structure of the surface tissue, colour and structure of the root tissue in the section with 45 characteristics corresponding to them. Individual profiles for beet samples were constructed using the descriptor panel. For each trait, we used a five-levelled scale, differing in the intensity of distribution of the trait described from 0% to 100%. The level of the trait was determined as a weighted average, based on the area per specific trait of all roots of the sample, referred to the total area of all roots of each sample of sugar beet. The descriptors were developed based on the analysis of 386 samples of sugar beets. The diseases determined by descriptor profiles did not coincide with the pathogens isolated on nutrient media in only 4 cases. According to the developed methodology with the construction of individual profiles, we evaluated 2 sugar beet samples with 10 roots each. We identified the following diseases confirmed by the isolation of pathogens in nutrient media: sample 1 – scab, brown rot, vascular bacteriosis, bacterial soft rot; sample 2 – Rhizoctonia, bacterial gummosis of beet, common scab, bacterial soft rot. The technique can be included in the control system for the technological flow of sugar production.
